Makes enough for 4-5
Takes 30 mins to make and 35 mins to bake

Ingredients
  • for the pastry:
  • 225g plain flour
  • 115g butter
  • 1 tbsp caster sugar
  • 1 free range
  • juice & zest of 1 lemon
  • a little milk, for brushing the pastry
  • for the filling:
  • 300g strawberries (or other berries0
  • 3 tbsp corn flour
  • 115g caster sugar
  • juice & zest of ½ lemon
Method

Preheat the oven to 190C/170Cfan. Cut a piece of baking paper to fit a baking tray.

Put the flour into a bowl, add the cold pieces of butter and using the tips of your fingers, rub the butter into the flour.

Sprinkle a little flour on a clean board or clean table. Put the dough on the flour and pat to flatten to make a circle. Lift this onto a baking tray.

Put the berries into a bowl, add the sugar, corn flour, lemon zest and juice and mix together. Spoon the berries onto the middle of the pastry and fold the pastry over the fruit around the outside.

Brush the pastry with a little milk and sprinkle sugar over the top. Bake for 35 minutes.
